Maybe some standard appetizers (if you have a membership to costco or sam’s, they usually have a nice selection of frozen appetizers – if you have access to a kitchen). i’m a big fan of these turkey tortilla roll-up sandwhiches they have at cost co, so good!

Putting together a cheese and cracker selection from Costco/Sam’s club can look really pretty, take very little time and be delicious!  Cheese prices in the US are also quite reasonable.

There are also lots of appys that can be quite affordably made at home, vs their purchase price.  Would you be able to get some people together, such as the bridal party, to have a big “make and freeze” event?  Things like mini quiche, spanikopita, etc.

Pita triangles/crackers and hummus, pickles, olives, veggie trays, shrimp rings, dips/sauces (can also be homemade).  Spinach dip, deviled eggs, breadsticks, smoked salmon, crap dip, bocconcini with basil/mint and balsamic, fruit trays.  Coconut shrimp, stuffed jalapenos, stuffed mushrooms.

I would try to avoid anything that’s super messy, as you don’t want people spilling on their good clothes!

What about something kind of fun like kettle corn?  You can make it ahead and serve it in dixie cups or something like that.

Guacamole, “gourmet” salsa, corn chips.

You can also just google “catering company menu” and take some suggestions from their appy lists.

Oh – sushi trays!  They’re delicious too.

Hope that gives you some inspiration!  I tried to name lots of things that would be quite easy to produce volume and minimize the amount of work and specific timing required.
