Get bold and bright with your decor; the existing colors will overwhelm anything pastel or muted. Map off where the tables will go, and concentrate on the uncovered parts of the floor first. Long, dark floor runners will break up that “gym” feeling, plus protect the floor from scuffs. Choose the runners carefully so people don’t slip or get high heels caught in them.

I think you’re going to really want/need to draw people’s eyes up and to the center of the room, which is an easier space to work with anyway. Maybe a big flower ball with some (just a few) white Christmas lights.

Wall drapes will work but they’ll need to go all the way to the ceiling and then it might look like a construction site. Maybe do big panels to the ceiling but leave a space equal to the size of the panel, in between the panels, and let the bare walls be exposed? The fabric panels will break up the gym walls and you can hang flower garlands to tie it all together. A vibrant, rich green (more like a Kelly green and not a light green) might be dominant enough to take over from all those colors without clashing.
