The reason I love it so much is because it is one of those INCREDIBLY rare (in my opinion) recipes that is super super good and also really healthy. I kind of hate healthy food most of the time, so that is huge for me. Also, I make them for people all the time and they’re always a hit. 🙂

I love recipe swaps!  Especially vegetarian recipes!!

 

I’m planning on making this one for watching the NYC marathon this weekend:

 

Hungry Jack Chocolate Chip Coffee Cake 
  
 
2-1/2 cups Hungry Jack Complete Buttermilk Pancake and Waffle Mix
1/2 cup miniature semi-sweet chocolate chips
1/3 cup sugar
1/2 cup water
1/2 cup sour cream (I used fat free)
1/2 tsp. vanilla extract
 
Topping:
 
1/4 cup sugar
1/4 cup finely chopped walnuts (I am going to try pecans next time as I am not a big walnut fan)
1/2 tsp cinnamon
 
Combine mix, sugar and chips in bowl and stir until mixed; add water, sour cream and vanilla, blend well.  Using an ice cream scoop, shape dough into balls and place them in an 8- or 9-inch squar pan sprayed with cooking spray.  Combine topping ingredients and sprinkle over dough. 
 
Bake at 375 for 24-26 minutes or until golden brown.  Cool ten minutes before serving.

@PrncssDva:  It doesn’t have a coffee flavor at all!  It’s like eating cake for breakfast…it’s so decadent and delicious!  Thanks for the veggie recipe 🙂  Although yoru pork chops sound fantastic!

@CaraMia10: oh wow that sounds soo good. Does it taste very “cream cheese”-y? My Fiance doesn’t like cream cheese but I feel like if its mixed in maybe it doesn’t taste so strong? Also, how do you make cilantro lime rice? I’m a rice newbie. 🙂

 

Also, this whole thread is making me hungry.

A seasonal sweet for the hive — Cranberry Cake:

Ingredients:

3 eggs

2 cups sugar

1 tsp almond extract

¾ cup butter (softened)

2 cups flour

2 ½ cups fresh cranberries

Directions:

Beat together eggs and sugar until light and fluffy, about 5 minutes. Add all other ingredients EXCEPT cranberries and mix. The batter will be heavy and nearly solid. Hand mix in the cranberries. Pour (ok, so it’s going to be too thick to actually “pour”… just get it into the pan haha) into a 9×13 greased pan and spread batter (press it in) evenly. Bake at 350 for 45 to 50 minutes or until a toothpick inserted comes out clean.

I shared this already yesterday in a different thread but here it is again!

 

I am bad about measuring things when cooking but I made this fast and easy last week and have been wanting to make it again ever since.

Ingredients

1 whole bratwurst or kielbasa saugauge ( I get them one it is buy one get one free and they defrost fast for a last minute meal)

Garlic finely diced

Breadcrumbs

Mustard – we use the one from Ikea but any kind you like would work

Seasonings – salt, pepper, whatever else you have and like

BBQ Sauce

Procedure

Cut slits along the sausage about 1/2 an inch apart

Mix the breadcrumbs with the garlic and seasonings, then take that and mix it with mustard till it is crumbly but moist

Take the mixture and shove it into the slits in the sausage

Pour BBQ Sauce over the top

Bake at around 350 till hot and bubbly

I served it with baked potatoes and there was none left!
