My husband and I are going to be taking a long weekend away with some friends. Since we’ll be there the whole weekend, we plan to contribute to the food supply. But because we’re going to be taking the train, cooking something in advance isn’t really a great option for us, since we won’t want to lug a cooler around with us.
We’ll bring a couple of bottles of wine and some yummy breads and baked goods. But can anyone think of any other recipes that travel well and can survive without refridgeration for several hours?

Maybe make something like a lasagna and freeze it? Even if you are traveling for a few hours it will defrost on the way and you can have it for dinner that night.

Can’t think of any recipes off hand (that aren’t baked goods), but I would think fresh veggies would do all right – if you buy them at a farmer’s market, they aren’t refridgerated to start. Maybe use an insulated bag to carry them?

I was thinking of maybe instead of preparing a meal, we could bring fresh breads and baked goods, and a few bottles of wine. We may be able to pack a small cooler and bring some cheeses. I think a meal is too much…
