So tonight I plan on making Ina Garten’s “Perfect Roast Chicken”. I’d love some new and interesting sides for roast chicken (I usually just end up layering veggies underneath the chicken and making some rice but that just sounds so boring right now). Any ideas ladies?

Grilled asparagus and mashed red potatoes
Jasmine rice pilaf and sauteed zucchini, squash, and onion
mixed vegetable casserole and fresh baked dinner rolls or crescent rolls
Ummm… yeah, a veggie and a carb (of any variety) should go nicely 🙂

Roast potatoes & parsnips. Peas & courgettes, sweede & carrot mash, sage & onion stuffing covered in gravy. Yum!

I would agree with asparagus, but it’s out of season.
I love fresh green beans sauteed in minced garlic and olive oil, and maybe some cheesy mashed potatoes? If I could ever drag the recipe out of FIL, I’d go with his million-calorie ones, haha.

roasted parsnips, sweet potatoes and squash (cut to 1″ chunks, toss w/olive oil, salt & pepper, sage and thyme) – roast on a cookie sheet
kale or spinach sauteed with garlic

Sautéed veggies (I love zucchini, squash, mushroom and onion) with some sort of potato. Mashed, seasoned wedges, etc.
