(Closed) roasted veggies?

Sounds awesome! Be sure to shake them so that the olive oil and seasoning will mingle with the veggies.

Sounds yummy but I think at 400 degrees you might only need to do 30 minutes

I would do them at 450 so you get more caramelization, but for a shorter time- 35-40 minutes. I would also throw in a head of garlic wrapped in foil with some evoo and salt to roast at the same time. Great as a spread on the veggies or on rustic bread.

Yup! I usually drizzle with olive oil and balsamic and roast a sprig of rosamary with the veggies.  Bell peppers tend to cook the fastest in your combo.  You may want to microwave the potatoes and carrots for a few minutes before roasting.

@heathaah:  I think 400 is fine. I like to do a similar recipe with balsamic vinegar but I chop the vegetables into pieces into chunks that are probably 1-inch. I guess it depends on your oven too, maybe mine is tempermental because I have to flip the veggies halfway through too. Chicken takes about an hour for me…let me know how it works out! You’re actually inspiring me to roast some veggies for dinner tonight!

Garlic powder is a staple for us when we roast veggies. I do it at 450 and cook the meat separately.
