My favorite is spring mix with Gorgonzola or bleu cheese, apples, and walnuts. I like switching it up with different fruits too.

I also like doing southwest style with corns, bean, and pico de Gallo.

I’ll add grilled chicken, ground turkey breast, or fish if I’m having it as my main meal. I’ll usually use balsamic vinaigrette dressing!

Strawberries, mandarin oranges, candied pecans, craisins (dried cranberries) and just a little bleu cheese for tang. Grilled chicken and balsamic vinaigrette. I love fruit in salads!

I don’t like anything sweet in salad (or in general), so for me it’s chopped kale and cabbage with some avocado slices. I make my own dressing it’s basically olive oil with some spices in it. Nice and bitter and healthy!!

We eat this everyday for lunch and love it!

Avocado, red onion, rocket or kale, cherry tomatoes and black olives. My go to easy dressing is equal parts olive oil, soy sauce and balsamic vinegar.

A popular summery salad in my country is watermelon, feta and herbs. Easy as that 🙂


Oh and we do the heavy potato salad too. Cubed boiled potatoes, pickles, peas, bologna or ham, onion. Cover it all in a mix of sour cream and mayo. It’s a meal in itself.

Baby spinach, strawberries, avocado, red onions, sliced almonds and feta cheese.  For the dressing…balsamic vinegar, sugar, tarragon, evoo, salt and black pepper.  Add grilled chicken.

Another one of my favorites..orzo pasta, cucumber, cherry tomatoes, black olives and feta cheese.  For the grilled chicken…evoo, lemon juice, smoked paprika, salt and pepper.  For the dressing…evoo, lemon juice, salt and pepper.

My lunch salad lately has been lettuce, baked tofu, gorgonzola, a handful of trail mix (almonds, walnuts, cranberries), and vinaigrette.  The beet one above sounds yummy!

All of our salads consists of boiled eggs and some sort of other protein, but from there it’s a fridge free for all. A lot of whatever is coming fresh out of the garden, at that time. We love spicy southern style salads with cheese/corn/beans/tortilla strips… But the next day it might be steak and blue cheese, cobb style… We always keep a big container of both lettuce blends and baby spinach and usually just cut up leftovers of what we ate the night before and some eggs – poof! Salad! Other than my spicy ranch that I can’t get rid of and hubby’s special local Italian, for specific salads or when we crave them, we don’t use a lot of dressing… Oil and vinegar or lemon juice and salt are our go-to dressings. Lime juice is good, too and a little lime salt rocks. Rather than croutons for crunch, we really like various different nuts. Almonds, walnuts, sunflower seeds… etc.

This morning had (all organic because TTC):  baby spinach, baby arugula, quinoa, golden beets, cucumber, carrot, peppers, pumpkin seeds (so much iron and I’m anemic), nutritional yeast, farm fresh medium eggs, and a miso-maple-yuzu vinaigrette.  Miso is a fermented soybean paste (delicious), and yuzu is a Japanese citrus like a sweet lemon/mandarin hybrid almost.

catash :  I came to post something similar, I looove beets in my salad! I do arugula, beets, apple, goat cheese and pecans or walnuts with just a simple balsamic vinaigrette. 

Another is just mixed greens with cara cara orange and blood orange supremes, blueberries and just a squeeze of orange instead of dressing.
