Salad inspiration please!!

spring mix and finding things in my fridge.

one day i made a blt salad, another day southwest style salad, another day it was just some roasted veggies and chicken with some leftover coleslaw dressing.

I’ve been enjoying Kale with walnuts, pinenuts, whatever fruit I have (peaches right now), avocado, often peppers and carrots and a creamy dressing of some kind. Often I’ll cook a chicken breast and throw that in there too

I like to add radishes, artichoke hearts, garbanzo beans, corn. Hmmm I like using arugula also. Sometimes baby kale.

I have had to cut out most greens due to the high vitamin K content, so I’ve been eating “veggie” salads. Mostly Carrots, Yellow Peppers, Tomato, Yellow Squash, Cauliflower and I toss with my fav dressing and pretend this is a salad lol

“Romaine or cos lettuce is a variety of lettuce that grows in a tall head of sturdy dark green leaves with firm ribs down their centers. Unlike most lettuces, it is tolerant of heat. It is more nutritious than iceberg lettuce.”

My go to salad:

  • mixed greens
  • tomato
  • cucumber
  • avocado
  • black olives
  • feta cheese
  • pepitas

Or some variation of that, and any dress, usually itallian, champagne viniagrette, ranch, etc. mmmmm

I love a good spring mix with grilled chicken, apples, strawberries, blueberries, granola, mixed nuts, bleu or gorgonzola cheese, and avocado ranch dressing.

moto5522 :  My favorite is a classic Wedge. Not a healthy salad by any means but SOOOOOO good. I skip the bacon, so it’s basically a quarter head of iceberg topped with blue cheese dressing, sprinkled with blue cheese, and garnished with chopped tomato or halved grape tomatoes. A bit of green or red onion if I have either in the house. MMMMmmmmm. 

If I’m trying to be healthy, I use a field greens & spinach mix and add in whatever healthy veggies I have on hand: broccoli, cauliflower, carrots, beets, cucumber, tomato, mushrooms. Usually cheese and olives too.

sweatergal007 :   arriaza415 :  How funny, Cos it is a very standard veggie where I am from! I am always loving learning the cultural differences on here. It is commonly used in Caesar salad, I much prefer it over iceberg!
