Bees, I’m on a mission to show my friend that salad is not just romaine lettuce with shredded carrots and cucumber.
What are your favourite “salads as a meal”?
Bonus points for delicious homemade dressing recipes!
My favourite: Spinach with some romaine for crunch, a few slivers of super aged cheddar, grilled chicken, whatever veggies are around and sliced apples with some sprinkles of balsamic. YUM.

Kale, green cabbage, broccoli, Brussels sprouts, chicory,topped with roasted pumpkin seeds and dried cranberries and poppyseed dressing

I love a good taco salad: greens, black beans, corn, some jalapeños. ..you can throw chips on it if you want, and use chili, or seasoned meat, or Catalina works great.
I also love spinach with oranges, strawberries and almonds with poppyseed dressing

ClaudiaKishi: there is an Argentine restaurant that layers french fries on the bottom, a lovely green salad with cherry tomatoes and mustard vinaigrette in the middle and a churrasco on top. The steak juices blend in with the dressing and fries….heaven!
But that is probably not the kind of salad you are looking for. 🙂

My favorite go-to salad is spinach,/romaine, candied pecans, dried cranberries, diced pear, diced gruyère (or goat cheese or blue cheese), with a raspberry vinaigrette or:
1 part apple cider vinegar, 3 parts evoo, 1T Dijon, 1 T maple syrup, a smashed garlic clove, s&p. Shake in a jar to emulsify. Adjust measurements to taste.

Baby spinach and arugula with cucumber, carrots, baby bella mushrooms, cherry tomatoes, scallions, cilantro, and almond slices. For dressing I mix light olive oil with white balsamic and a pinch of sea salt.

2 of my faves:
1) Spinach with grilled chicken, avocado, crumbled turkey bacon, olive oil and balsamic.
2) Field greens with onion, goat cheese, watermelon, olive oil and balsamic.

Roast slices of sweet potatoes (I use a potato peeler to get them real thin) and walnuts in the oven, add some prosciutto near the end. Toss with greens of your choice and a bit of cheese. Dress with a vinaigrette of lemon juice, mustard, salt, and evoo.

Rocket leaves, avocado slices, roasted cherry tomatos, shredded carrot, red pepper slivers and pesto dressing (I just add more oil to a regular basil and cashew pesto base).
I could eat this all day every day.

serendipityz: that salad is how I got Fiance to start eating vegetables!! He loves it.
ClaudiaKishi: my go to salad with protein is baby spinach pre washed organic with hard boiled eggs, red onion slices, shredded mozzarella cheese and sunflower seeds with a raspberry vinaigrette or light caesar.
My favorite salad is candied walnuts or pecans (which I make with agave so they aren’t horrible for you), spinach, gruyere, pear with champagne vinaigrette.
