Roasted kale, cauliflower and Brussels sprouts salad with lemon parmasan dressing. AMAZING.

This isn’t really a meal, but I love Jerusalem salad: cubed cucumber, tomato, and onion mixed with lemon juice, oilve oil, and salt. Very fresh and simple, but not a lettuce leaf in sight. 🙂

A favorite spring salad is kalamata olives halved lengthwise with thinly sliced orange, shaved fennel, shaved onion and arugula with a barely there oil/lemon/honey drizzle.  Olives & oranges are one of my favorite combinations.

taco salad is the best!

In the spring/summer i also like spinach, pineapple, strawberries, mandarin oranges, blueberries, sunflower seeds, and poppyseed dressing (sometimes I just use pineapple/mandarin orange juice as a dressing)

My lunch every day:

Field greens, half a granny smith apple, crasins, toasted chopped almonds (gotta toast, they taste waaay better, but you can do a whole bunch up at once and use accordingly), maybe a little goat cheese (or gorgonzola if you want a little kick) and chicken if I have some/want the extra protein. I toss with a raspberry vinagarette, wish I could say I make it myself but I’m not that kind of put together.

Ladies all of these look amaing, I might have to switch up my lunches!

I work at a deli and my favs are:

chicken caesar- romaine, grilled chicken, croutons, Parmesan, Caesar dressing

oriental salad- romaine, toasted almonds, Chinese noodles (those squiggly crunchies), the sweet & tangy dressing

spinach salad with goat cheese, strawberries, candied walnuts or almonds, and red wine vinaigrette

chef salad- green leaf romaine, ham, turkey, hard boiled eggs, cheddar cheese, pickles, olives, tomatoes, onions, croutons, and ranch dressing!

cobb salad- romaine, bleu cheese, bacon, tomatoes, onions, hard boiled egg, and a tangier version of ranch

bbq chicken- romaine, crispy chicken, jalapeños, avocado, cheddar cheese, tortilla strips, bbq sauce and ranch for the dressing:) 

 

most of these are not healthy options, but they are delicious and filling!!

This post reminds me of a conversation I had with a girlfriend recently – we both wish that nicoise salads would come back in style.  You used to see them on menus all the time and now you never do but it’s one of the best salads ever.  Now I want one!
