This is my go-to salad in the summer, it’s always a big hit at parties. Kind of a chopped salad with corn, avocado, tomato, feta, cucumber and red onion with a cilantro vinaigrette. I like to do a serving of broccoli slaw, grape tomatoes, green onion, lentils, and some shredded chicken with PC green onion and cilantro avocado dressing and sriracha.

My favourite salad is a little steal from Pinterest known as pesto chicken antipasto salad (mouthfully sorry!). Spinach base with tomatoes, pesto chicken, mozzarella balls, chopped red bell pepper and chorizo. It’s delicious.

I love romaine, slices of grilled steak, mango, avocado, dried cranberries, and balsamic vinagrette. Yum!
I also do romaine, bell peppers, chicken, jalapenos, cilantro, cheddar, and cilantro with either balsamic or ranch.

The salad Fiance and I have been obsessed with lately is whatever various greens I happen to buy with grilled chicken, dried cranberries, feta cheese (my choice) or goat cheese (FI’s choice), sliced almonds if I can find them at the store (i usually can’t), and raspberry vinegrette!

This salad is so good
Spinach and apple salad with pecans and cranberries
For the salad:
5 cups of baby spinach
3 apples, thinly sliced
½ cup pecans
1/3 cup dried cranberries
For the dressing:
2 tablespoons extra virgin olive oil
1 tablespoon ground Dijon mustard
salt and pepper, to taste
2 tablespoons balsamic vinegar
1 tablespoon honey
Place the ingredients for the dressing into a bowl and whisk together until combined. Set aside.
Place all of the ingredients for the salad into a large serving or salad bowl and pour over the dressing. Toss to combine thoroughly and serve.

I’m a huge fan of non lettuce salads, and both of my picks are perfect for mason jars too. My top two favorites are:
1. Tomato (grape or zima if you can), cucumber, red onion. Chopped (to your preference on how fine or rustic you want). Add in cilantro and dill, chop it up (or any other herbs you like). Add in lime juice and salt/pepper, or you can drizzle it with your favorite Vinaigrette.
2. Replacing lettuce with Kale and/or Broccoli slaw(they sell it in the same section that you can buy chopped cabbage, but it’s got broccoli stalks, carrots and radish) for any salad. Both the kale and broccoli slaw will always stay crunchy and it makes me feel pretty full.
For salad dressings, sometimes I just add in lime juice and a bit of salt and pep. Other days, I will mix in Olive oil + Balsamic Vinegar/Apple cider vinegar, with a splash of sesame oil. Or my favorite dressing is Kraft’s Classic Herb, it’s the closest thing to canada’s subway sub sauce, which I swear, I could drink straight from the bottle haha.

My fave is: mixed baby lettuce, tomato, cucumber, grated carrot, roasted beetroot, Greek fetta, avocado (or only 1 fat if I am feeling virtuous), tuna and flat leaf parsley with a drizzle of balsamic or lemon.

Lettuce, roasted walnuts, goat cheese and sliced pear (either fresh or canned). We usually eat it with a dressing made out of olive oil, balsamic (I have an amazing fig balsamic which I like to use), honey, pepper, salt and rosemary. Best salad ever, I swear!
