I have one!! Mmm pumpkin pie!

2 eggs

1 1/2 cups pure pumpkin

1 cup brown sugar

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp ground ginger

1/4 tsp salt

3/4 cup evaporated milk (or heavy cream)

Beat eggs lightly, add pumpkin, sugar, cinnamon, nutmeg, ginger and salt, stir until well combined. Blend in milk. Pour filling into a pie shell. Bake at 425 F for 15 minutes. Reduce heat to 350 F and bake 30-35 min longer, or until knife inserted in centre comes out clean. Cool before serving.

Yum! My only advice for Pumpkin Cheesecake- do not try being helathy and using “fat free cream cheese”…. disaster! so disgusting. If you’re going to make it, make it the right way! 🙂
