I would say having a poster done professionally, or doing smaller charts, and attaching them to a poster board. 

Then you can have it framed.

This is what i would do if i was doing a seating chart – you use sewing pins, and colored thread to indicate guest to table association. You could even get a large print out poster on vista print for like $12 – just create your floor plan and alphabetized table in MS word and up load it. then do the pins,

@kveloso:  You can choose which ever size you want and print almost anywhere. I always suggest to get it printed at Sams Club or Costco because the price of a 20×30 is $9.00. That size is a large size print. They also have where you can get it printed on a board so that you dont have to frame it. I have not compared prices for that to other companies.
