This is one of my favorite chicken recipes (just omit the mushroom step for him):

 

Spinach Stuffed Chicken Breasts.

This recipe with mayo or this recipe with sour cream (both from AllRecipes.com).

Pound boneless chicken breasts until even.  Cut a pocket into the side of the breast but don’t cut all the way through, and don’t cut either end.  (Think of it like a pita pocket.)  Fill the pocket with a mix of feta cheese, mayo, spinach, and spices (I like spicy hot flavors or garlic). Place the stuffed breasts in a casserole dish.

I don’t wrap the chicken in bacon.  I eliminate the bacon altogether.

To jazz it up even further I will saute some mushrooms in a frying pan and then de-glaze the pan with red wine.  Add a can of cream of mushroom soup and simmer for 10-15 minutes.  Either pour the red wine mushroom sauce over the cooked chicken and serve, or serve the red wine mushroom sauce in a gravy boat on the side so guests can add their own sauce if they choose.

My only change is he likes things really lemon-y so I up the amount of lemon by A LOT (usually dump in about a 1/2 cup of lemon juice).
