I apologize if this thread has already been created and is buried somewhere amongst other threads, but I figured this was worth a shot!
Post a recipe of anything you like to cook (that you invented/recreated) at home that’s low-fat and good-for-ya! I’ll go first.
I am not one for measuring anything, so I just estimate. haha
1/2 pkg baby spinach
1/3 cup cooked garbanzo beans
2 tsp crumbled bleu cheese (or any smelly cheese that you enjoy :))
a bit of low chicken broth or bouillion (just enough to sautee, I use Better Than Bouillion)
1 tsp pesto (make your own or use premade)
Sautee garbanzo beans and walnuts in pesto and a bit more of olive oil and chicken broth. AFter beans brown a bit, dump in the spinach and sautee til wilted. Right before the spinach is wilted, pour in the cheese (or you don’t have to if you don’t want to!).
Lots of protein (garbanzo beans), fiber, and omega-3s (olive oil and walnuts)! Mmmmm!
