Easiest weekday meal ever: put chicken breasts in the crockpot and dump in some salsa. DONE. Serve w/ whatever veggies, Spanish rice, whatever.

Agree with the crockpot thing. 

Also with casseroles. You can mix it up on the noodles you use, or throw in ham, or chicken, or beef, or tuna or change up the veggies in it….we always mix it up. Plus it lasts at least another meal.

Seared Chicken thighs! Eat it about 1-2 a week. seriously easy, use this recipe as a starting point:

I’ll have a vegetable roasting in the oven (broccolli, asparagus,carrots, potaotes etc) some time before I move the chicken to the oven, depending on what it is.
Serve with defrosted rice from the freezer or pasta/pototes. Sometimes I make a pan sauce with the pan juices while everything else is in the oven. Done in ~30 min.

I use an app called Mealime to plan my meals for the week. It’s soooo easy, and all the recipes are simple and healthy. My favorite part is that it assembles a grocery list for you of everything you’ll need from the store, and it picks meals that use up the ingredients you buy for the week. You only have to buy a few things, and then you use them all up because it will plan 3 different meals that use, say, aspargus, so you have no leftovers that you don’t know what to do with! You don’t even get tired of the asparagus because each recipe has you prepare it a different way.  It’s all totally free too 🙂
