My boyfriend /loves/ it and I think it’s pretty healthy? Lots of fresh stuff and filling 🙂 I havn’t really looked around the rest of the website but since it’s called cookinglight maybe you’d be able to find some other recipies for inspiration? 😀

@yippee62913:  Anything lettuce wraps. They are sooo easy and sooo good, especially for a quick lunch. You save a lot of calories by not eating bread or a wrap. I’ve done grilled chicken, turkey, steak, tuna…Add lots of veggies and rather than adding mayo, opt for mustard or hummus. My favorite is tuna mixed with hummus. If you buy the romaine leafs, they are easiest to make them with.

My fave recipe of the moment is a Sausage Kale & White bean pasta. 

Serves 4
1 lb. ground italian sausage
1lb kale leaves, torn up
1 can of White northern Beans, drained
1 lb of your favorite short pasta (mine is Gemilli)
1 Cup chicken stock
1 tsp chili flakes
1 tsp garlic salt

Brown the ground sausage until its cooked through.  Add the kale and chicken stock.  Cover for about 3 min on medium heat.  Add in the beans when the kale is tender.  Season with Garlic salt & chili flakes. 

Add freshly cooked pasta and enjoy!

@yippee62913:  This is an old Italian recipe (I think). It’s simple and we eat it at least once a week. Might sound weird to someone who hasn’t had it before, but it’s actually really yummy and I’ve been eating it my whole life lol.

1 can red kidney beans, drained

half an onion, chopped

1 small tin tuna (preferably one packed in oil)

salt & pepper to taste

pita bread

You put it all in a bowl and mix it up. If the tuna isn’t packed in oil, then drain the water and add a spoonful of olive oil to the mixture.
