I make a lot of roasted balsamic vegetables. I chop up asparagus, onion, bell peppers, and zuchinni/squash and put them on a pan with garlic, balsamic reduction, olive oil, and dijon mustard and bake at 400 degrees until they are tender. It’s so sweet and good. You could add mushrooms, too, if you like them. It’s really good over creamy polenta or with grilled pork chops.

For winter, roasted butternut squash is good side dish. Just toss with some cinnamon, salt, and oil and stick in the oven. If you want it to be sweeter, you can add some butter and brown sugar.

Recently DH made a turkey burger meatloaf- Barefoot Contessa’s recipe- and it was soooo yummy and pretty easy.
