@DanielleZara:  Here is a really easy recipe for chili that I make in the crock pot.  My SO and his buddies go crazy when I make it:


1 medium sweet onion, chopped
1 clove of garlic, minced
1 796mL can of diced tomatoes
1 680mL can of plain tomato sauce
1 540mL can of black beans
2 540mL cans of red kidney beans
1.5 tablespoons of cumin
2 teaspoons of chili powder
900 grams (2 lbs) of lean ground chicken
*If you want, add some light sour cream and shredded cheddar cheese as garnish.
1) In a frying pan add the onion and chicken, cooking it until the chicken is no longer pink. Set aside.
2) To the crock pot add: the diced tomatoes, tomato sauce, beans, garlic.
4) Drain the onion and chicken mixture in the frying pan and add it to the crock pot. Stir.
5) Add the cumin and chili powder; Stir.
6) Set the crock pot on high, for 1.5 to 2 hours.
7) Serve hot, adding garnish if you wish.  Eat.
Enjoy!  This recipe is high in fibre from the beans, and low in fat since it uses lean chicken.  It fills you up, and is perfect for leftovers! Plus, you can add any other veggies you want – I like it as is, but you could add corn, mushrooms, green peppers, carrots…

One of my favorites is Salsa Chicken and its super easy and healthy. Just pour one 16 oz jar of salsa over 5 chicken breasts (trim the fat) and cook on low for 6 to 8 hours. I usually shred the chicken once its cooked and eat it on corn tortillas, rice and black beans, or salad. If you want more flavor you can add taco seasoning, but I would only use half of the packet because of the high sodium content. I hope you enjoy it!
