@orchidblooms:  Sure! Since we make it for the entire week you might have to adjust for only one meal. Also sometimes we add extra veggies we need to get rid of like corn or peppers. But here it is:

Quinoa Taco Salad

Prep: 15 min.    Cook time: 45 min.

Calories: 377

Fat: 17g

Carb: 43g

Protein: 22g

Ingredients:

  • 1 lb. Jennie-O taco seasoned ground turkey (might be hard to find, if so just add some cumin to regular ground turkey!) -3 oz per meal for 6 days
  • 3 cups of cooked quinoa – 1/2 cup per meal
  • 3 avocados – 1/2 cubed per meal
  • Shredded cabbage – as much as you want!
  • Red onion -diced, as much as you want!
  • Salsa – your choice, a couple big spoonfuls

Directions:

  1. Brown taco seasoned turkey
  2. Cook quinoa – 1 cup dry = 3 cups cooked
  3. Slice and chop all preferred veggies
  4. Mix up and eat! Can be eaten warm or at room temp!

@mrscash:  Yup! Usually we prepare everything for the week on Sunday night and reheat for a fast and easy dinner during the week. Some things we can’t make ahead of time like the smoothie and eggs but we don’t mind really. 

I never thought about changing it up like that! For me it’s easier to just prepare everything the same way every night though if I was getting sick of it that would definitely be a good idea!

@LovelyLee:  Ahhhh we do taco quinoa salad too!! SO GOOD. I’m obsessed with quinoa. Except Fiance and I are little fatties so even with the whole pound of meat we eat it all in one night! :O haha

 

ETA: When I used to cook dinner, I’d make weekly meal plans. Now Fiance does dinner and he never plans! Drives me nuts.

@MrsHoneyBear:  I ate quinoa pretty unfrequently until recently when I introduced it to Fiance and we soon became obsessed. It’s SOOO good. Believe me if I wasn’t strict with our portions we’d probably gorge ourselves on the taco salad!

beef chilli with potato wedges yesterday. 

Leftovers tonight with rice. 

Wednesday: sausage casserole & mash. 

Thursday: Turkey mince taco mix & rice

Friday: homemade fish & chips with mushy peas.

I’m on a body transformation thing again so we get meal plans but I generally tend to mix it up from the recipe index (all healthy and yummy stuff)! This week is:

 

 

 

Sat

 

Thai chicken patties on whole wheat buns, salad etc.

 

Sun

 

Chargrilled chicken tender skewers with satay sauce, rice noodles and veg

 

Mon

 

Brazilian Feijoa with rice

 

Tues

 

Grilled Lamb with Greek salad and cous cous

 

Wed

 

Egg tortilla with fetta and sweet potato, side salad

 

Thurs

 

Hake with salad and baked potato

 

Fri

 

Hopefully something out!
