(Closed) Side Dish Ideas Please! (It's not as easy as it sounds.)

Oh, I feel for you and your mom!  I can’t eat anything you listed, plus a few.  A few good ideas:

–A lemony lentil salad, like this one: http://www.tasteofhome.com/Recipes/Lemon-Lentil-Salad

–a pasta salad with a non-gluten pasta (corn or rice are best–quinoa noodles are ok, but the noodles get REALLY stiff as they cool)

–If she can have beans, hummus and gluten-free crackers with fresh veggies is a good bet!

–How about nuts? You can do a fruit-and-nut salad with vanilla coconut milk or almond milk yogurt.  (I don’t know where they are located, but I know that Kroger and Wegmans both have non-dairy yogurts in stock, at least in larger cities).

Salad option–  

  • arugula, diced dried figs, bacon cumbles and reduce some balsamic until thick and mix with some good quality olive oil for the dressing. 
  • butter lettuce, diced heirloom tomatoes (get two different colors like purple and yellow), french’s fried onions in canister, crushed peanuts, shredded carrots- dressing of red wine vinagirette (vinegar, oil, water, mustard, dash kethchup (helps with emulsificaation), garlic, bit honey, fresh basil or parsley
  • Ginger Kale Salad with spicy peanut dressing

One of my favorite quick, go to sides is green beans with onions and bacon, cooked in either olive oil or bacon grease…  yummm…

This is a great dip if you ever need it. It’s like a sweet-spicy spagetti sauce and a big hit at parties. I serve it with Frito Corn Chip (the big kind the are easier to dip with).


You could make a really easy roasted potato side. Cut up some 3-4 kinds of potatoes (red, yukon gold, russet, sweet). Toss in olive oil and and spices like garlic powder, tyme, rosemary, salt, pepper (I use Penzey’s Fox Point and Sunny Paris). Put in oven (350-ish) until done.
