If you use white rum and club soda, you would have a clear drink

Grapefruit Rum Cooler

4 mint (sprigs)
1 tbsp superfine sugar (taste)
23 cup grapefruit juice (fresh)
1 12 tbsps lemon juice (fresh, lime, taste)

3 ozs light rum (taste)
club soda (chilled, seltzer water)
angostura bitters (taste)

1

In a cocktail shaker with the back of a spoon, crush mint sprigs with sugar and juices until sugar is dissolved; add rum and about 1 cup ice cubes and shake 30 seconds; strain mixture into 2 tall glasses filled with ice cubes and top each drink with club soda and a splash of bitters.

Rum Refresher

ice (crushed)
3 ozs white rum
1 oz fresh lime juice
1 tbsp simple syrup

club soda (chilled)
1 wedge lime (garnish)

1

Fill a cocktail shaker with ice.

2

Add the rum, lime juice, and simple syrup.

3

Shake well and strain into 2 tall glasses filled with crushed ice.

4

Fill the rest of the way with club soda and garnish with lime wedges.

We had a blue hawaian for one of our signature drinks and everyone loved it!!  (we called it “something blue”) it was malabu rum, blue curracio (sp?) and pineapple juice.

We also had champs mixed with a dash of grenadine and o.j., people didn’t seem to like that one nearly as much!

we’re doing the same thing. we want to make them in advance, though so we won’t be using any carbonated beverages. He drinks beer, but I still wanted to do a his and hers, so instead I’m doing a feminine and masculine drink.

I got all of my ideas from http://www.allrecipes.com

His: (commonly known as the “Royal Flush”) 1 oz whiskey, 1 oz peach schnapps, 2 oz cranberry juice

Hers: (commonly known as “Mexican Brew” or “Summer Brew”) 3 coronas, 1 c vodka, 1 container frozen limeade

I see I’m not the only one who thought of vodka and grapefruit juice. It makes the most lovely peachy pink color and it’s scrumptious!

We served dark & stormies at our wedding, which was a BIG hit. They’re basically one shot of rum in about 4-6 oz of ginger beer (the higher quality ginger beer, the better).

You can’t use anything with carbonation in it if you pre-make them so your mix options are limited. How about a sweet manhattan:

2½
shot
Maker’s Mark bourbon

shot
Maraschino syrup (from cherry jar)

1
shot
Martini Rosso sweet vermouth

3
dash
Angostura aromatic bitters

You can use any type of whiskey in place of the bourbon or you can even try a dark rum. I would cut out some of the cherry syrup if you use rum though since that is a very sweet alcohol.
