The first thing that came to my mind was an Old-Fashioned for something old.

How about blueberry vodka, with blue curacao and lemonade, or even better- fresh lemon juice and a little simple syrup.  Btw, if you are going for a blue drink, make sure the bartenders don’t use too much blue curacao.  It is neither tasty, nor as attractive in excess.

Old fashioneds are nice, but they are pretty labor intensive, as they involve muddling fruit.  So it will take the bartenders longer to prepare each drink.  I would go with a Manhattan.  It is also made with bourbon.
