what about something you don’t have to heat at all? maybe like a good variety of cheeses, crackers and fruit? i know people normally think fried food for late night snacks (love the idea of a french fry bar) but logistically something unheated would be best it sounds like.

if you still are leaning towards pizza is there some place you could get good quality pizza from. we have a wood fired pizza chain here that does fancy pizza with all sorts of untraditional toppings that would be a little more formal. overall i wouldnt worry about a snack being formal, just figure out what sounds best to you!

I was reading somewhere on the boards where they were planning on doing a late night cereal bar and having bagels there. I thought that was an awesome idea.

I love the idea of a taco or nacho bar for those late night munchies.  You could serve margaritas and Coronas!

What about reheated lasagna or pizza’s out of the oven!

But Nachos sound good too!

Nachos sounds awesome but I wouldn’t do it in a chocolate fountain type thing – just the thought of the stuff you may have to put in the cheese to get it to flow nicely… doesn’t bear thinking about!

Those things all sound fun but you do think that people are going to stay that late and you won’t end up wasting your money?  Pretty much everyone at our wedding was home by 11:30, including us.

I love breakfast late at night. What about quiche, breakfast pastries, ham biscuits, doughnuts, fruit?

All of it can be served room temp and set out ahead.

when we were looking for things to do (we’ve ended up renting a machine that makes tiny fresh donuts) one of the things i thought was cool was a popcorn bar. but then others told me its not worth renting as its so easy to do yourself, which is true. it had like big barrels of popcorn – like a regular, kettlecorn, some sort of spicy corn, caramel corn etc. i don’t know about something hot as others have said, you’re not sure how many people will still be around and something unheated will be easier for you to save and eat yourself over the next few days. i do also like the cereal bar but since the smores are sweet, it might be good to something savory.

We are doing the nachos bar around 10:00 at our reception. We’ll have chips, salsa, guacamole, beans, meat, cheese sauce, etc. We are having our reception at a baseball stadium though, so it fits the location.

i love the idea of nachos!

we’re planning on doing a sweet bar – baked goods and what not. i mean, who doesn’t love a good home made cookie?
