I’ve been totally digging panzanella!!  Which is pretty much grilled bread salads.

I got a high quality baguette, cut it into slices and topped with olive oil and rosemary and threw on the grill.  I skewered some sirloin, big scallops and amazing shrimp and marinated them in lime, then grilled them too.  Cut the bread into big pieces and tossed the bread with mixed greens, meats, bell pepper, mango, feta and red onions and topped with a white balsamic vinaigrette.

Oh man! I don’t have a picture, but I guarantee it’s amazing: Watermelon Salad.

You use a melonballer and scoop out a bunch of watermelon (however much you like; I don’t have the measurements in front of me). You mix it with a little bit of olive oil, chopped red onion, fresh chopped mint, and some feta cheese. Of course, you want more watermelon than the rest of the mentioned foods, but it’s SOOO good! Feels fresh, light, and makes a LOT of food, so you can have snacks all week long!

Grape salad! It’s definitely a dessert but so good for cookouts Or any summer meal. Use one pound of red grapes and one pound of green grapes. Mix together 8 oz of softened cream cheese, 1/3 cup of brown sugar, 1/3 cup of white sugar and a tablespoon of vanilla extract. Pour over and add chopped walnuts. Amazing!!

Bitter greens, peaches that were marinated in maple syrup.

I eat so much salad it’s ridiculous. 

One of my favorite summer salads is watermelon, red onion, and feta cheese with a little olive oil, balsamic, and salt.  It sounds like a strange combo, but man, it’s delicious.

I love finding Salads that aren’t “the usual”.  So this is a great thread.

One of my favourite Salads comes from the Sackets Harbor Brew Co. & Pub in Upstate NY… (from their menu = http://www.sacketsharborbrewpub.com )

Brie & Berry Salad

Brie Cheese wrapped in a Puff Pastry & baked, then served over Baby Spinach, Green Onion, Green Apple, Blueberries, Strawberries, and topped with Cashews and a Raspberry Vinaigrette (although it is also delicious with Maple infused Poppy Seed Dressing… how they’ve served in the past)

Fabulous on a Summer’s Day overlooking beautiful Lake Ontario and watching the “boat traffic”

Nothing fancy, but Future Mother-In-Law makes an awesome garlic caesar salad – I love the kick of the garlic! Thinking of using that for our wedding – yum 🙂

I love simple things like tomato, basil and mozerella or Chicken Ceasar
