My wedding is May 26 and I’m having trouble deciding on a menu. It will be buffet style so def would like a beef, chicken, and veg option. At the first tasting we tried more Italian-like foods. I thought most people liked Italian and it would be easy to do a veg pasta. However, now I’m second guessing Italian and would like to come up with a more summery-y menu that won’t leave our guests in a food coma. I really don’t know much about food or creating menus so any suggestions would be very much appreciated.

Chicken in a light herb sauce. Rice Pilaf. Carrots in honey butter. Spring mix salad with mixed berries. Vegetarian tortellini with summer vegetables in dressing (if italian dressing it can be served hot).

For the veg option a rosted vegetable cous-cous would be delish!

For me, summer = grill!
Antipasto platter with grilled veggies, cured meats, and cheeses. Hummus with toasted pita. Marinated & grilled chicken, lamb, and/or beef kebabs. Grilled corn on the cob with chili lime butter. Orzo salad with grape tomatoes, feta, green herbs, and kalamata olives. Tropical fruit salad. Lemon cheesecake.
I love Italian food, but it’s really heavy/carby and for a summer wedding I’d go with a lighter menu.
