Haha omg that pic legit scared me…

what should i be doing? Sleeping. I doubled up on my sleeping pills 4 hours ago, and still. Wide. Awake. Urgh. 

I have the biggest exam of my life in the morning (no joke, its my canadian boards… It basically determines what, if any, residency i can get… No pressure…) and ive been tryig to study but my mind is racing. Pretty sure this is an acute manic episode… yay…

I’m whipping up a big, spicy, hearty pot of vegetarian chili; I also just baked some cheddar jalapeno cornbread to go with! It smells divine in here!

Still in my PJs, having a panic attack over how I am seriously behind in wedding prep and how much needs to be done to plan a wedding RIGHT AWAY WITHOUT DELAY OMG when you have a 6 month engagement.

@MissSangria:  we cut a weekend trip short bc we were scared flights would be canceled due to the ice that is predicted here. So over this winter!!! I’m unpacking now :/

You need…

~1 cup chopped carrots

1 bell pepper, diced

1 package mushrooms, finely chopped

1 medium white onion, chopped

2-3 cloves garlic, minced

1 28-oz can crushed tomatoes in juice

2 cans black beans

1 can kidney beans

1/4 cup red wine

chili powder

cumin

tabasco sauce

salt & pepper

dried basil

dried oregano

ground cayenne pepper

1 cup water or vegetable broth

 

What I do is add a little olive oil to a nice big stock pot, then saute the onions, garlic, and spices for a minute or two. Then I add all the other raw, non-canned veggies…so the carrots, bell pepper, and mushrooms. Let them saute a bit and get nice and soft. Season with salt & pepper to your taste. Then add all the canned tomatoes, beans, the water/broth, the red wine, and as much tabasco sauce as you like (depending on how spicy you want it). Bring the whole mixture to a boil, reduce heat to low, and simmer for as long as you’d like. The longer it simmers, the tastier it will be!

The amounts on the chili powder and red pepper are completely up to your taste…we like ours SPICY so I add quite a bit! I taste as I go and then add more as I please.

Also, it keeps it thicker and richer if you don’t drain and rinse the canned beans first.
