As a vegan, I would be happy to see this! I would make a salad of lettuce, black beans, peppers and onions, salsa, and guacamole. Sounds delicious!
I do have a couple older relatives who don’t eat Mexican food though, because their stomachs can’t handle the spice. If you think you have any guests who will require a really mild option, maybe see if the caterer can make up some cheese quesadillas.

i think a taco bar sounds great! I think adding rice and salad on the sides would be a good idea. Also maybe do flour and corn tortillas for those with gluten sensitivities?

For those who asked, we are hoping for 70-75-ish to come. We are getting married on a boat and guests have to be shuttled there from the parking area, so guests will be staggered in getting on the boat. We are going to have dinner ready for when the first people get on board and keep food going for a good 1.5 hours before the ceremony. The boat only uses two caterers, and the one we are going with knows the layout of the boat and how to set up for most efficient access to the food. It’s a casual wedding, so I don’t expect anyone to more dressed up than khakis or a sundress.

I am going to a wedding this summer that will have a taco bar. They are getting it catered by a local mexican joint. I am excited! I did think about how messy it might be…Having a taco bowl option for those worried about eating daintier might be thoughtful!

We had a taco bar but also had a meat carving station running at the same time. Huge hit.

Mmmm invite me! Could you maybe have bowls and some brown or cilantro lime rice so people can make burrito bowls eaten with a fork if people are concerned about the mess?
That being said I would be more than happy to eat tacos. Please have queso!!

I love this idea! As a vegetarian/ vegan a lot of wedding food I can’t eat. This will please everyone, I would just have someone there to make sure everything stays clean/ orderly.

yay to rice, quest, and margaritas! I’d be careful with cilantro though. I’m one of those who hates it / May have an allergy/aversion to it.
Cilantro is quite polarizing. We, as humans, are actually predisposed to really love it or really hate it :p

Sounds delicious!! IdI suggest adding some sides. Beans can also be used as a side, maybe corn or rice.
