Here I go again talking about food…
I’m looking for a good Taco Soup Recipe, something that you can eat with Corn Chips and eat it as a dip if you’d like to also.
Anyone have any good ones?! Thanks so much!!!

I know I am a little late to the game on replying to this post but my Fiance and I have this kind of taco/ mexican soup that we both love. It is a combination of like 3 recipes and we just took from each until we got it the way we like it and its sooo tasty and super simple!! Its not really like a dip, its truly more of a soup so I dnt know if thats what you are looking for. Sorry if the recipe is a little crappy bc ince we kind of made it all up we dnt really have specific measurements..oops!
You need: -Chicken breast -1 medium can of Pace Picante Sauce (I like the medium or mild) – 1 can of corn – 1 regular size box of Chicken broth (or about 2 cans) – 1 can of diced tomatoes – 1 fresh tomatoe – 1/2 a jalapeno – 1-2 cloves of garlic, 1 small can green chilis – 1/4 of an onion (sometimes I use red onions and sometimes I use the small greeen onions, depends on what I have)
I boil the chicken because it shreads easier. You start off with a pot and put probably 2 tbsp of oil in it and saute the garlic and onions until soft. Then add the chicken broth, tomatoes, pace, corn, green chilis, the chopped up jalepeno, and the cooked chicken breast (shredded) and just kind of let it simmer until everything is kind of cooked together. I usually add fresh cilantro, cheese and avacado to the top after I put it in a bowl and I fry tortillas to eat with it. Its so tasty. If any of that doesnt make sense and you want me to explain it better I have no problem doing that bc I feel I’m forgetting something but its like 5 am and I just took some pain meds bc my surgery was yesterday so its highly likely.

Oh, I have a recipe that might work for your needs too! Mine is not very soup like, but it is amazing on tortilla chips, I have used it to make burritos, and put it on top of lettuce for a great taco salad. The best part is that it is for your crock pot so you put it on, go to work, and it is done when you get home!
You need 3 frozen chicken breasts – 1/2 bag frozen corn – 1 can beans (black, pinto, whatever kind you like) – 2 cans of Rotel – cumin, salt, pepper, and chili powder to taste.
Pour frozen corn into bottom of crockpot, top with beans and frozen chicken breasts. Pour rotel over chicken. Cover and cook on low for at least 8 hours. When the time is up, uncover, shred chicken with a fork, it won’t take any effort, then season with cumin, chili powder, salt and pepper to taste.
It tastes wonderful and can be used in sooo many different ways. It is a favorite of both Fiance and I. 🙂

Theres a great enchilada soup mix that is in the grocer’s freezer section that is awesome…I’m sorry I wish I knew the brand name

Almost 3000 reviewers can’t be wrong 🙂 You should check out allrecipes. You can search just about anything & find endless reviews and revisions! It’s failproof! I’ve made countless dishes from that website & I’ve had so many compliments about my cooking 🙂
