I had a cousin get married at Chapel at the Park. I wasn’t actually able to attend, but everyone said it was gorgeous! They were planning on being outdoors, but rain changed their plans last minute. The chapel itself looked gorgeous, though, so at least you would know you had a solid back-up plan.

Ober Gatlinburg?  I’m not sure if they do weddings, but it could be gorgeous!

Above the Mist Wedding Services has some very nice packages, depending on what you want. We almost went with them before we decided to stick to the plan :). Best of luck!!!

For that many guests, I think you’ll probably have to go into the bigger cities.  Check out some places in Knoxville, I’m sure you can find something there.

@06anchored08: Can you check with some of the theaters in Pigeon Forge? They might be willing to let you have an afternoon ceremony/reception if you’re not there during peak season. I’m not sure of your feelings on religion, but I bet there would be a church big enough to hold everyone down there.
