@Corilee13: Thank you!! I may just do buttercream and use fondant for decorations now that I think about it!

I think this is a suicide mission. That $300 isn’t just going to ingredients – it is going to labor and delivery. Your cake should seriously be the last thing you are thinking/worrying about the day of – you won’t have as much time as you are thinking you will have – i promise!! It is also a small part of the budget. Give in on this one, seriously.

I would NOT leave anything to do on your wedding day.

That seems like a stress-filled disaster plan.

If you can get it done before the day-of, then I’m all for making your own cake.

I thought about it – but I decided the stress of it all wasn’t worth it.

Then, when an unexpected family emergency happened 2 weeks before the wedding and I literally had to drop all wedding stuff for a week – I was thankful that I had planned a ‘nothing’ week the week of the wedding, since I ended up having to run around like a crazy woman to get everything done.

OP: I haven’t read the other comments, but I just wanted to say that I think you’re the best person to answer your own question since it’s something you’ve done before for others and know all that goes into it.

My advice: absolutely bake the layers in advance. In fact, prepare everything in advance – layers, filling, icing. Then all you need to do the day of (or the night before even) is assemble it.

If you have the nerves to arrange your own flowers and bake you own cake days before your wedding, then you are my personal hero.

If I had had to do this, I would probably be released from the looney bin right about now.  I was stressed enough with the typical last minute tasks.

I’m doing it and I am not even a pro. It’s a very small wedding though and our ceremony isn’t until later in the day.

Then again, I won’t even be disappointed if it doesn’t look super amazing as long as it tastes good and I plan to freeze the layers in advance. IMO ‘wedding cake’ usually tastes gross, so even if it looks amateurish it will still be an improvement to me.

Only one person is horrified about this plan so far and she is just disappointed I could care less about how beautiful it looks. Honestly, I was planning on skipping cake altogether, because my fiance doesn’t like cake much, but the photog convinced me to have it for the photo op if nothing else.

I wanted to and probably would if I wasn’t having a Destination Wedding.  That kind of makes it even more nightmareish and downright impossible.  Good luck.

@Corilee13:  hee hee, no I was thinking about making it there.  I could have rented a unit with a kitchen, but then I’d still need loads of equipment 🙁

Girl, I’m making my own cake, and possibly Cakes in a Jar for favors. I also have a cake business so I really didn’t see the point of me going somewhere else for my cake. I’ll know it’s done just the way we want it.

@Corilee13: I’m not sure about the design yet. You seem really confident about this project, so I am sure you can handle it.
