Is 2.5 hours enough time for 2 hairstylists to get hair done on 7 people? I’ve been asking a few people, and the majority say no, which has me worried.
My 4 bridesmaids will get updos, and my hair length is only to my chin so it will just be styled. The other 2 appointments are for the two mothers, and should just be a styling appointment and not an updo.
I called the hairstylist again and she assured me that 2.5 hours is more than enough time. But then why are so many people disagreeing with that?

I think a good hour for you alone.. so I say no way for 7 people!

I think its WAY too little.
Put it this way, when I get my hair done it takes them at least 40 mins to just straighten it (I have longer hair but not hugely long).

You should tell them you are concerned about the time limit and you wan them to be there at least 3 hours in advance. 3 hours for 2 stylists and 7 people seems reasonable if only 4 are updos.
I would’t give them an option. just tell them that’s what you need. ( you are in fact paying them…)

Look at it this way: 2.5h with 2 stylists is a total of 5 hours work
Updos will take minimum 45min x 4 updos= 3 hours
Leaving 40min for each of the remaining 3 people only having their hair styled.
40min x 3= 2 hours
It can work, but it’s tight. An this is your wedding day so it’s not a day for you to be stressed out about time.
