Does your 7 hours include decoration/setup/photography time? Or is it ceremony to end of reception? And how hot early May is depends on what part of Texas you’re in (and the fact that we in Oklahoma have had a couple of atypical weather years lately). If I were in your shoes and worried about people thinking the night is young at the end of the party, I might bump up the wedding earlier (if it IS warm, 5 will still be warm for pictures), making the party end a little earlier, and figure out some sort of “after party”… ie a local bar or late night restaurant.  Preferably, put a groomsman or bridesmaid (or one of your parents) in charge of the afterparty so you and your other half can retire whenever you feel like without feeling like a wet mop on the party mood. My family would think 2 am is a really late night, but my college friends wouldn’t think so — it’s all in perspective!

Another idea, since you want to spend time with your guests obviously (oh, and will they be flying in the morning of the ceremony, or some time before? That will affect how late they want to stay up celebrating) would be to have a day after event… A brunch, maybe? If they are flying in ahead of time, maybe do a little sightseeing in the area the day before the wedding? I’m sure they’ll love to see nearby history or culture – or maybe just the shopping. 🙂
