Depends on the baker and what your contract says.

If they don’t normally provide this service and you’re asking for this to be a special order, then it will depend on what you negotiate in your contract and when they want you to actually order it (a year in advance or closer to the date you want it).

If they normally provide this service for an additional fee with their wedding cake contracts – then it should all be outlined in your contract.  If you don’t yet have a contract, then call them and ask.

@Stephaine:  our cake vendor included that for free, we just went back a year later and ordered it. But that was one of the reasons (among many) that we chose this specific vendor. They all have their own policies so I would add that to your list of questions to ask if you’re interviewing multiple vendors. 

Edited to add: she did this service for free specifically because she didn’t want people to eat her cake frozen for a year. She said her cake was too good to be frozen and sit there for a year, and she wanted her reputation to be based off fresh cake!
