@AprilJo2011:  my fiance is the same way. In general, there are no recipes he is happy with if there is no meat. But, I have learned that heavy pasta meals can sometimes do the trick. he loves homemade mac n cheese. Also, rice meals (i.e. homemade spanish rice with heaploads of refried beans and cheese). So, I guess, my advice would be “heavy” stuff- pastas, rice, cheese.

This is hard for me to answer since I am the same as your husband… usually something with carbs and cheese will satisfy me though. Bean burritos and spanish rice also, so most spanish dishes will do the trick….

Thats about it.

I am a vegan with a meat-eating Fiance and I just cook the meat separately and put it on his plate with whatever I cooked. Sometimes he eats what I cook without meat…

@happyface:  Yeah this too, make sure he gets meat sometimes though. I would get quite grumpy without a steak for so long.

my fiance’s mom is a vegetarian and she raised 3 meat eating boys and 1 meat loving husband. She did the same thing- cooked a meat dish separately for them. Another thing she does is uses veggie meats. Morningstar makes veggie cheese, ground beef, burger patties, chicken burgers, nuggets, etc. She will use veggie ground beef instead of regular beef in her spaghetti. Fiance’s dad loves it, but my fiance hates it (he won’t touch it). You might try it and see what your fiance thinks. Just don’t tell him its not real meat at first and see if he even notices. that’s what my fiance’s mom did and none of them even knew! Of course, she told them later, and now my fiance is cautious anytime she cooks. lol.

eta- another one fiance likes- cheese enchiladas. He loves them. I do put ground beef in them, but I know that he would eat them without it. Just the cheese and tortillas does the trick to keep them full.

@happyface:  We do the same thing at our house. We’ll make a dish and then divide it so he can add meat to his portion.

@AprilJo2011:  Food like enchiladas works really well for us. Homemade quacamole, salsa, cheese sauce, tortillas, and then we do a filling mixture of corn, feta, black beans, onions, and peppers (meanwhile cooking some strips of chicken in another pan), that way we can both assemble and choose our own filling before baking in the oven. I’ve made them only veggie for us a few times and he raved about them, normally he’s the same as the OP’s hubby, “Uh, where’s the meat?” but all the veggies and beans fill him up.

One thing i’ve found is that he can’t stand “meat alternatives” like tofu substitutes. Normally, just bulking up a meal with other sources of protein and fibre will do the trick!

I thought of another one! “make your own pizza” nights. Fiance loves this. I just put a bunch of toppings out, make the sauces, and roll out the dough, and then let him go at it. Then, I’ll bake it for him and wa la! Pepperoni and sausage are super cheap, so it’s not too difficult to have that out if your hubs wants it. But, for my fiance, I just put out some pepperoni and he’s happy with that. Another one he loves is fettucini alfredo. I think the combo of the pasta and the heavy sauce is what makes him satisfied.

There are a lot of “fake” meats out there…. I’ve tried to hand it off in spaghetti sauces and…. it doesn’t fool a true meat eater!
