(Closed) URGENT – Desperately need a good pumpkin pie recipe!

2 cups pureed pumpkin

1 can sweetend condensed milk

2 eggs

spices

1/2 tsp salt

mix and pour in pie shell

bake in 375 f oven for about a hour

@SpecialSundae:  if you roast it until it’s very caramelized, just make sure your food processor is strong enough to break down the sticky carmelized bits! And don’t forget to strain the purée with some cheesecloth to make sure it’s the right consistency for pie. You don’t want it to be too wet, or the custard will never set.

oh ok with the pumpkin I would roast until fork tender… peel the skin off after it cools. then try to strain some of the moisture out of the pumpkin with your hands or with cheese cloth. then puree in the food processor.

@SpecialSundae:  aah, you’re making me hungry.  that looks like a really great recipe.  I’m curious, how do you figure out if a pumkin is meant for cooking? Are they just smaller?

Why in the heck did you ask for recipes for “good pumpkin pie” if you were planning to modify it for gluten- and dairy-free?  Baking is a science so even if someone gave you an excellent traditional recipe, your substitutions would have nullified said recipe and would not have been the same “good pumpkin pie”.
