I think green beans would go if you were able to make them. What makes them “iffy”? And what about a simple mashed potato or a wild rice pilaf kind of deal?

Do you guys like rice?  I make basmati with coconut milk in place of the water/broth, add a little salt/pepper and it’s delish.  Adds a nice flavor to the rice. 

Or maybe with a chicken a little pasta with pesto sauce?

What other veggies do you like?

You’re right, I don’t think the two courses necessarily “go” together, but I never mind if my appetizer & main course “go”, as long as everything on each plate “goes”, if you know what I mean.

As a side for the chicken, I think broccoli roasted with fresh garlic and topped with freshly grated parmesan would go well with what you have here. Zucchini also pairs well with that sort of thing (I usually sautee mine with garlic & italian seasonings).

How about spinach?  Take the spinach out of the chicken dish stuffing and have spinach as a side.  Then add some form of potato.  Maybe a fancy mashed potato like garlic mashed red potatoes or some other unique mashed potato recipe.

I think you should change the stuffing a bit to go with the appetizer flavors. You could to the panko, but pound if flat. Then top it with a mango salsa.

As a side then I would go with @Lt.Columbo:  rice dish and maybe some braised kale in a bit of olive oil, red pepper flakes, lots of lemon and garlic. Finish with lemon zest. Serve the chicken over the greens and the salsa on the chicken. Makes for a nice presentation.

Or maybe steamed artichokes and make a garlic aioli to dip the leaves in?

roasted fingerling potatoes??? easy and my Fiance LOVES them!

You could also do a Kale salad with an avocado dressing (or just kale salad on the side) Fiance and I really like this: http://ohsheglows.com/2011/06/17/weekend-glow-kale-salad/

You can use whatever dressing you want with that salad if you aren’t vegan. 🙂  Fiance is not vegan but this is how I trick him into eating more vegetables.

I can cook anything and serve him roasted potatoes and he will be happy. lol

As for avocado hummus, it could work. IT would probably taste like mashed guacole to me. 

The problem with avocado and the foods you are choosing is they are generally from different regions and food cultures so its a bit tougher to combine them. 

If you have a salad you could make an avocado dressing?

Oh & you could wrap the shrimp app in bacon (running around the avacado base)… since I think you have a lot of bacon available!
