I have to figure this out ASAP and I need some help/advice. I have a main dish and an appetizer that both sound good. Not sure if they go together though. I also can’t think of even 1 side dish!
Here are things I know I want. Avocado as the star somewhere. Not a “plain” chicken breast. Stuffed is fine. And I want it to be something I wouldn’t normally make on a weeknight.
What I have so far. For an app:
Shrimp Topped Avocado Salad
Panko Crusted Chicken Stuffed with Ricotta, Spinach, Tomatoes, and Basil
And that is as far as I have gotten… I need atleast one other side dish. Mushrooms are out and green beens and asparagus is iffy. And do these even go together? They seem a little conflicting. What if I cooked the shrimp differently? Or maybe there is a better dish alltogether!
Pinterest got me this far, now I need the bees!

I think green beans would go if you were able to make them. What makes them “iffy”? And what about a simple mashed potato or a wild rice pilaf kind of deal?

Do you guys like rice? I make basmati with coconut milk in place of the water/broth, add a little salt/pepper and it’s delish. Adds a nice flavor to the rice.
Or maybe with a chicken a little pasta with pesto sauce?
What other veggies do you like?

You’re right, I don’t think the two courses necessarily “go” together, but I never mind if my appetizer & main course “go”, as long as everything on each plate “goes”, if you know what I mean.
As a side for the chicken, I think broccoli roasted with fresh garlic and topped with freshly grated parmesan would go well with what you have here. Zucchini also pairs well with that sort of thing (I usually sautee mine with garlic & italian seasonings).

How about spinach? Take the spinach out of the chicken dish stuffing and have spinach as a side. Then add some form of potato. Maybe a fancy mashed potato like garlic mashed red potatoes or some other unique mashed potato recipe.

I think you should change the stuffing a bit to go with the appetizer flavors. You could to the panko, but pound if flat. Then top it with a mango salsa.
As a side then I would go with @Lt.Columbo: rice dish and maybe some braised kale in a bit of olive oil, red pepper flakes, lots of lemon and garlic. Finish with lemon zest. Serve the chicken over the greens and the salsa on the chicken. Makes for a nice presentation.
Or maybe steamed artichokes and make a garlic aioli to dip the leaves in?

Oh! What if I scratched the shrimp app and did a soup instead. And how does avocado hummus sound?
So, fr an app I would do:
Tomato-Basil Parmesan Soup
As a side dish I could have:
Hmm… I am not 100% positive on the hummus though…

roasted fingerling potatoes??? easy and my Fiance LOVES them!
You could also do a Kale salad with an avocado dressing (or just kale salad on the side) Fiance and I really like this: http://ohsheglows.com/2011/06/17/weekend-glow-kale-salad/
You can use whatever dressing you want with that salad if you aren’t vegan. 🙂 Fiance is not vegan but this is how I trick him into eating more vegetables.
I can cook anything and serve him roasted potatoes and he will be happy. lol

How about a salad? The salad with walnuts & the crumbly cheese? I’ll have to look it up…

@lefeymw: I thoght about that but of the two, the app is dispensable. I can change the app much easier than the main dish. Mostly because that was so hard to find as is! Also, he is super weird about not being a fan of chicken breast unless it is stuffed or cut up. I don’t get it… I really don’t. Otherwise what you just described sounds UH-Mazing!

As for avocado hummus, it could work. IT would probably taste like mashed guacole to me.
The problem with avocado and the foods you are choosing is they are generally from different regions and food cultures so its a bit tougher to combine them.
If you have a salad you could make an avocado dressing?

Oh & you could wrap the shrimp app in bacon (running around the avacado base)… since I think you have a lot of bacon available!
