Ive had some really awesome vegan baked goods (including bavarian cream roll things) and cake!

Just gotta go to the right baker. Look for vegan bakers in your area that have done cakes before. Co ops are usually a good place to look.

**edit: I see you already have a baker. Vegan cakes and icings are really easy to make. I’ve done it for vegan friends and luckily theres tons of easy things that you can find to replace non vegan ingredients. BUT I do suggest trial runs… just because you replace with a vegan item, doesn’t mean it will react the same way a nonvegan item will in a recipe… this shows a lot in icings.

Why do you need a vegan cake? Are you or Fiance vegan? I just ask because I’d think if you were, you’d know resourced to find recipes — so I’m wondering if it’s not that’s Vegan?

And of course, I have to know the back story on Dr. Suess too! Do you have any inspiration photos?

Oh youre fine! Marshmellows aren’t vegan. However, there is vegan marshmellows available (and they are super tasty! I use them for marshmellow truffles).

Vegan is a complete way of life, trust me, but its easy to follow once you get the basics down. Just check all ingredients if you’re buying things you aren’t too sure about. There’s sites online that list out tons of stuff. There’s tons of vegan alternative products available, so it’s not hard to replace when doing on your own, just RESEARCH. Like I said before… they don’t always act the same in a recipe as the nonvegan ingredients do.

Also, I suggest a cookies cake because… OREOS ARE VEGAN!

Sidenote: I dont know how far you are, but the Iowa City Co-op does vegan wedding cakes for up to 500 people.

Hopefully this will be a helpful resource for you! The baking substitutions section should get you on the right path.
