I have a guest coming to my wedding whom is a vegan. I dont want to give her something thats plain and boring. We are serving Spit roasts and salads. Could anyone please suggest a relatively easy to reheat (prepare day before?) meal that I could make for her?
I have searched many a website but I trust my bees!

Do you have a co-op, whole foods, or veg restaurant near you? It might be easiest to order an entree directly from them and heat it up before the reception.
By The Way, it is incredibly thoughtful of you to consider your guest’s dietary preferences! Being a true vegan is tough!

Tell her to bring her own- meat is delicious and should not be neglected

What about stuffed bell peppers (stuff with quinoa and veggies) or a pasta dish without cheese?

Some sort of bean stew dish (lentil stew, or black beans) will be hearty and delicious, plus very easy to make ahead and reheat.

I think some kind of vegan risotto would be good… if you google “oh she glows” you can find a great vegan food blog with awesome risotto recipes. 🙂

@o0olibelulao0o: I have managed to pick 4 awesome looking recipes from Oh She Glows. Chilled double chocolate torte, Perfect veggie burger, roasted basil pesto pasta, olive oil past with walnuts, lentils and red peppers. Loving that most of these can be made ahead.

You may want to get it catered – probably the easiest and safest bet.
