- Wedding: October 2010 - Ladder 15 Restaurant
Hey everyone! I was just trying to think of a vegetarian option to suggest for our menu, and I thought I’d turn the question over to you super knowledgeable people!
We want to suggest to our venue a more upscale/different vegetarian dish–we’ve seen too many “pasta with tomatoes and cheese” options at weddings these days and we need ideas!
Has anyone chosen a particularly yummy veggie dish for their wedding? Please share!

We are offering mushroom risotto cakes, served over local greens, for our wedding… they seem to be a big hit. Many non-vegetarians are ordering them!

Our venue offers pasta with steamed veggies in a light herb sauce… sounds delish!

not a suggestion, but i’ve had eggplant at 2 weddings and both times it was VERY overcooked. eggplant is typically on a venue’s “list” of options but i always advise people to stay away because it’s so easy to over cook (nobody likes rubber).
we are having a broccoli and cauliflower quiche as our veggie option. yum.

We’re having a risotto with fontina cheese, fresh local green beans and cherry tomatoes, with a balsamic reduction. It’s SOOOOOOOOOOOOOOO good I’ve considered changing from beef many times.

I haven’t had veggie dishes at a wedding, but one I make for myself sometimes is a portabella mushroom roasted and stuffed with a ricotta cheese and spinach mixture, seasoned with garlic and pepper.

Our pasta course had 2 choices, which were both veggie friendly:
• Roasted butternut squash ravioli with brown butter/sage sauce
• Spicy Puttanesca (tomato-olive-caper) sauce over orchiette pasta
Other vegetarian choices from our caterer:
• Sweet potato napoleon with sage and cream
• Wild rice cake with wilted greens and forest mushrooms
• “Bella Piccata” – Portobello mushroom with lemon-caper sauce
• Stuffed artichoke heart with herbed couscous (vegan)
• Baked stuffed poblano chile with red beans and rice (vegan)
Vegetarian friendly pasta doesn’t have to be boring red sauce with cheese, here’s some pasta ideas:
• Gorgonzola ravioli with toasted walnut and grapes
• Roasted pumpkin ravioli with a butter/sage sauce or a cream sauce
Some seafood choices in case your vegetarian friends eat fish but not other meat:
• Grilled salmon with apple and bourbon glaze
• Poached salmon with pineapple salsa
• Seared ocean scallops in saffron cream sauce
• Seared tuna steak with ginger and scallion sauce

We had mushroom raviolis and they were the HIT of the night! We served the food family style, so each table recieved the fish dish, the filet and the raviolis and our caterer reported that the raviolis went the fastest by far!

I adore “portobello mignon” – essentially, portobello mushroom sauteed in olive oil, garlic, and sea salt, and served with a side of rice and grilled asparagus. Yum.

We don’t have any vegetarians/vegans on our list but there are a ton of non-meat (which includes no chicken or seafood as those are also meat) options to choose from that don’t include pasta, mushrooms, or eggplant, all of which are staple vegetarian dishes for caterers. Potatoes are well liked by nearly everyone and are very filling. Squash of any kind will work too.
Here’s a couple links with ideas that you send along to your caterer:

I love a good mushroom ravioli or maybe since your wedding is fall you could do a pumpkin ravioli!! We had one strictly vegetarian guest and she is one of my BFFs so I made sure beforehand she was okay with mac n cheese with steamed vegetables on the side – she loved it!

We are serving a Mushroom Wellington – it’s a mushroom and herb mixture in puffed pastry – it’s sooo yummy!

Our vegetarian dish is Ratatouille which is also vegan friendly 🙂

We haven’t done our taste testing yet at our venue but the vegetarian entree that looks the best to me on paper is the vegetable wellington. They have 3 other options at our place so we may go with something else.

We had a baked lasagna with white sauce. It was packed full of fun veggies like julienned squash & carrots. There was a bunch of other veggies, I don’t remember what, but it was fab!
