Another vote for Trader Joe’s steamed lentils! You could make your own lentils, but the TJ package makes life easy. I’ve substituted them for ground beef in tacos and sloppy joe type things.

I love some good ol channa masala or coconut veggie curry 

smashed chickpeas with craisins, blue cheese, and avocado on toast

avocado on toast

‘fake’ chicken nuggets over salad with wing sauce

black bean, corn, peppers, avocado, and cilantro salad with lime juice, olive oil and some chipotle seasoning to taste

Quesadillas!! We always have tortillas and cheese in the house and some sort of beans and salsa. Throw in your favorite veggies and dinner in 5 minutes!

one more that I remember seeing on here a little while back- quinoa, black beans, salsa, and cheese served warm, and if you’re not opposed to eating eggs, throw a runny egg on top. Ah-mazing! We make a big batch at a time and then just heat leftovers and cook an egg.. Again, done in 5 minutes and pretty healthy!
