I totally agree that the idea of “not feeling full” after a veg meal is either mental, or due to carb content 🙂
Like I mentioned earlier, I would make some more protein-centered items… Eggplant, veggie stew, etc are all delicious but lack protein. Incorporate beans, eggs, broccoli, even sneakily-disguised tofu/tempeh in there (prepared really well, like in a Thai stir-fry, it can be delicious even to carnivores).
