MrsGatito:  whenever I have no idea what to make for dinner I chop up whatever veggies I have (sweet potato, carrot, turnip, potato, red onion, cauliflower, whatever) put it in a zip lock bag with 1/8 c olive oil, 1/8c balsamic vinegar, some basil or oregano and some sea salt. Bake them at 325 until the potatoes are starting to get soft. broil them for a min or two to make them crispy. 

I eat a giant bowl of veggies like that for dinner at least twice a week, pretty much whatever you have and throw it in the oven. yum

Darling Husband taught me a recipe from his mom for really yummy carrots. You slice them (so that they’re small circles) and boil them until they’re soft. Drain them, add some butter, cinnamon, allspice and brown suger (just enough in total to lightly coat all the slices) and mix it all together! It tasted really good, and its also easy and quick to make.

bake zucchini with some olive oil, salt, pepper, and parmasean in oven for 35 minutes on 375 degrees. it’s delicious!

MrsGatito:  our favorites:

-green beans sauteed in a pan with asian sweet chili sauce (we just get it jarred from the asian section of the supermarket) and pre-sliced almonds and minced garlic.

-Peeled and sliced carrots baked in the oven at 365, simply tossed in olive oil and salt and some italian dressing before being popped in

-Broccoli baked in the oven with black pepper and a generous amount of shredded parmasean shaken over 

-Spinach, italian style canned diced tomatoes, and chicpeas sauteed in olive oil and minced garlic

-Black beans and corn heated together and tossed with lime juice

-Cauliflower, broccoli, mushrooms, sliced onion, and red bell pepper baked in the oven with some vegetable broth, olive oil, minced garlic, seasoned salt, and lots of red pepper flakes for a kick (we usually bake sliced italian sausage along in the same dish and serve the sausage and veggies over some whole wheat pasta or cous cous)
