Let’s answer your post as simply as possible … YES you can wear gloves! MANY other bakeries choose sanitation over ease when working.  To address the issue with “have you ever attempted to…” is extremely condescending! Exactly what the problem is with Carlos Bakery! Act like other people are stupid and you are the king of baking! As if! Get over yourselves!

After reading these negative posts about Carlo’s I don’t understand why they still have these long lines outside their storefront. I used to go here when my daughter was in pre-k (2003). Afterschool we’d walk over for a coffee for me and a cookie for her. It was always empty. Easy in, easy out, and a small table with two chairs. What happened?! And what happened to the product? The other day a mom brought in Carlo’s cupcakes at school where a number of parents were volunteering. I took my cupcake home for my husband. I didn’t tell him where it came from, and after one bite, he spit it out because the icing tasted like egg. It made him sick. Perhaps, future brides should try other bakeries instead of falling for the brand name. In Hoboken there are other choices such as Sweet, or in nearby Weehawken there is Gladis Homemade Cake and The Hudson Cakery (both by appointment), and in Parsippany The CakeOver (gluten-free and so yummy; btw there is a picture of a duck cake on the website!). Good luck future brides and I feel horrible for the bad experiences and for those of you who had great experiences – luck was on your side!

I’ve been living in Hoboken for a few years now and I don’t understand the obsession with Carlos. The line is absurd, way overpriced and the service is terrible. I don’t think any of their pastries or cakes are stand out. They are known for the design, not the taste.

Well when I was taking a pastry course someone that had worked at the bakery mentioned that they used box cake for their cakes.  They purchase it in bulk.  I was completely surprised by that considering they charge $20pp for special occastion cakes.  It’s all the hype with the television show.  But in defense of Buddy, I hear he is really nice.
