sunnierdaysahead2 :   I believe the issue is now that OP has made plans for Thanksgiving with her family and won’t be available now to celebrate with the ILs because SIL keeps changing the date.  

OP, I’m glad you and husband are standing your ground.

Plans were already made around the ILs own decision on when to have Thanksgiving. To keep changing plans and expecting everyone to constantly adjust is just rude – especially because it also extends to OPs family having to constantly adjust to this SILs inability to stick to her own original plans. 

If it was some type of emergency or whatever, sure. I can be understanding, but to just change plans because you suddenly want to go to a water park and expecting everyone to say “how high?” when you say “jump” is ridiculous. Plans have been set for a few weeks now from what I remember, it’s not like this is one day’s discussion.
