(Closed) Want to make FI a delicious dinner – suggestions?

One of my favorite things to make is mexican lasagna. Everyone always LOVES it and it’s super easy.

All I do is layer tortilla (I create lasagna-like strips by ripping them up), salsa (I use a couple of different fancy kinds to make it taste extra good), black beans, shredded cheese (cheddar and pepper jack), and diced tomatoes (if you can find a can of fire roasted chipotle tomatoes, they make the lasagna taste AMAZING).

I usually do about 2 or 3 layers of all of the ingredients, so you’d probably need 3 jars of salsa, 1 can of diced tomatoes, and 2 cans of black beans.

I bake it covered for about a half hour at 350, then uncover it, add more cheese to the top, bake another 10 minutes, and serve it with sour cream and fresh cilantro.

Im planning to do the same for Fiance.. I am going to do filet mignon wrapped in applewood smoked bacon with crumbled gorgonzola cheese, mashed sweet and white potatoes (he likes white, I like sweet) and maybe green beans or asparagus.

I have today off and SO is working and he almost always cooks so I am also making a meal tonight.

I’m doing carots with brown sugar, salt potatoes and shake and bake pork chops lol

My Darling Husband loves, loves lasagna so that’s my go-to meal if I want to make something special for him.  He taught me to drizzle hollandaise sauce along with the cheese layers and it makes such a delicious, cheesy lasagna!  It sounds weird, but trust me, its amazing!

Fiance and I like to have whole wheat ravioli with home made marinara sauce (you can find recipes easy online), chicken italian sausage, garlic bread and red wine.  It’s our nice dinner and pretty easy to make.

Go for it!! It’s actually pretty inexpensive. I figured it’ll run about $30 with a bottle of wine! :0)
