I did a small 2 tier cake w/ buttercream. It had the seperating pedestals in between the layers to get rid of that “flat” effect you don’t care for. Maybe look into using those to add height to your cake. Buttercream tastes alot better than fondant, In My Humble Opinion.

@redband:  I’ll post a picture of my actual cake tonight.  My husband has the pics on his computer, and I need him to send them to me.  

This was my inspiration cake, though.  The actual one was a much lighter yellow, but the height of the tiers was about the same.  The top was a 6″ round and the bottom was 10″.

If you want a taller cake, just make the tiers a smaller diameter.  The smaller diameter will feed less people, meaning that you’ll need more tiers to have enough servings for 50 guests.

I promise, your bakery will be able to make a beautiful, elegent cake for 50 people! 🙂

@redband: Since you say that the hotel is the only place to get the cake, and their skills aren’t exactly stellar – I really like your idea of doing several smaller cakes!
