I’m not sure I know what advice you are looking for.  Do you want centerpiece ideas or overall wedding themes? 

I think the theme is hard to help you with because it’s usually something special to the couple.  Without knowing that, here are some hints to help you find one.

Use your location, so since you’ll be on a boat, nautical themes.  Since you’ll be in Manhattan- maybe Broadway/theater theme.

The date of your wedding, if your wedding is around 4th of July- maybe independence day?

If you or your Fiance are from another country- maybe use that as your theme and incorporate some traditions.

Your food- if you are serving a particular type of food, your theme could be luau, Italian/Vieniese,  Chinese banquet, etc.

Your hobbies- are you in to movies (do a Hollywood theme), wine (do a vineyard theme), baseball (serve Crackerjacks, pretzels, game food), etc.

The flan is a great idea (and delicious).

As for cherry blossom inspiration- have you checked out Mrs. Cherry Blossom’s posts?  Her wedding was in 2006, so unless you’ve been reading a long time you might not have seen them.  She did a lot of DIY and has some templates of her various projects.
