 I just added a Man of Honor and another bridesmaid to my side, so she will get a dress of the same material (should it still be long can it be short?) 

I would keep the dresses the same length, since generally long dresses are more formal than short ones, and you will want them to look like they are attending similarly formal events.

Since our main color is mint green idk if the girls should have mint green sashes or leopard print? or do something so that they have both the mint and leopard on them in some form. We want the Maid/Matron of Honor and Best man to differ from the others. So I thought put Maid/Matron of Honor in pale mint sash and then the Man of Honor in a brown vest, and the bridesmaid in leopard. So that the bridesmaid and Man of Honor match and then my Maid/Matron of Honor is different. 

I would do your Maid/Matron of Honor and Best Man in mint. (MOH has mint sash). Men’s wearhouse has a couple of minty greens including venice pistachio, bellagio clover and honeydew, (also the tuscany cypress is amazing (FI wore it to my prom)). I would put your man of honor in a brown vest (maybe with a mint tie if you’re feeling bold) and put your bridesmaid in brown, maybe with a mint sash. Leopard print is really, really bold and I wouldn’t want her to have more attention than the other people in the ceremony.

And then the Maid/Matron of Honor and bridesmaid can both have leopard flower in their hair or whatever.

Personally I would want you to be the only one with the flower in your hair, but thats up to you.

The problem with that is that there are no groomsmen vests that are even close to pale mint green….so it would be hard to match him and Maid/Matron of Honor.

The honeydew vest is the same shade as honeydew at davids bridal, and I suspect they sell a sash in that color.

I also wanted to do leopard ribbon on my bouquet, so would the girls have that on theirs as well?

The girls don’t have to have leopard on their sashes. You can do that if you want, or you can do the ribbons in brown, black, or mint.

Let the two bridesmaids/man wear just black. Add a sash in mint to the maid of honor, have the best man wear black and/or mint. So the two highest will have the mint you should be the only one in leopard. I agree it’s bold and stands out. If you want everyone to have the brown/black, I’d do something small, like something in/on their bouquet/boutineer.
