As someone that has previously worked in a law firm, the lawyers would laugh at you if you even suggested trying to sue for bad customer service.
As someone that currently works in customer service, being a horrible customer does not make me want to help you out any quicker.
I understand that you want the second ring for the sentiment, but you are overreacting. You have a ring for the wedding day. That should be enough. I would definitely try to get some sort of compensation, like a discount from the store though when it does come through.
Have a glass of wine and try to remember that only having one ring will not ruin your wedding day or your marriage.
